fertilisers, nochemical pesticides and a
careful annual pruning. The San Martino
Organic Olive Oil directly arises in the
farm's oil-press .

Abruzzo Region, hilly area nestled in the ATRI town (A.M.S.L.)

Cultivar

Principal varieties are local ones: Dritta e Gentile di Chieti; Frantoio, Leccino, Moraiolo.

Pruning

Conventional pruning

Harvest

Mechanical and traditional (hand-picking); the olives are placed in open crates and harvested during the day.

Extraction system

Continuous cycle plant in two stages, at low temperature and without adding water. Milling each day to the end of harvest.

Colour

Green with golden nuances.

Flavour

Good yelded reminiscent the ripe olives softened by a note of artichoke, green almond and fresch herbs.

Taste

The taste agreable has the artichoke and floreal fragrance. In closing, a perfect harmony of slight bitterness and sharpness.

Use in the kitchen

An ideal condiment for grilled meat, white fish while cooked and raw vegetables and for all the Mediterranean preparations.
